Eddie Jackson is a former football cornerback and an American chef. On December 19, 1980, he was born in the United States. In 2004, the Carolina Panthers gambled on him by signing him as an undrafted free agent.
After Jackson’s retirement from football, he began a career as a personal trainer and eventually purchased a food truck in Houston under the name Caribbean Grill. His entire life, he had been devoted to perfecting his culinary skills. Jackson’s collegiate football career was spent at the University of Arkansas. Jackson started 21 of 47 games in college at both cornerback and strong safety for the University of Arkansas, accumulating 174 tackles, 35 passes defended, one forced fumble, and two fumble recoveries.
Jackson also competed in the high hurdles for the national champion Arkansas Razorbacks. Jackson was also an All-American at the college level in track and field, where he won four national championships. He still retains the record for the 110 high hurdles among freshmen.
