In 2022, the Eagles signed him as an undrafted free agent after he played collegiate football for Utah. Despite only participating for two years as a starter, he ended his high school career fourth all-time in Utah in terms of touchdowns (with 111). He twice won the Utah Valley Football Player of the Year award and helped Timpview win consecutive state championships. Covey’s total offense at the school was close to 7,400 yards.
As he served an LDS mission in Chile in 2016, and 2017, Covey was unable to s the games. In 2018, he went back to Utah. He played in thirteen games that year, starting four of them. He was awarded a first-team all-conference returner for his 221 punt return yards and 144 kick return yards. He also had the most receptions (60), receiving yards (637), and yards per game (49.5) in Utah. He concluded the season with one touchdown, 1,174 yards of total offense, and a 3-for-3 throwing performance for 71 yards and two more scores. He had to skip the bowl games due to an ACL tear sustained in the Pac-12 Championship Game.
