On Monday, February 12, 2024, David Bouley, the American chef who popularized French nouvelle cuisine and helped to shape modern high-end cooking, passed away at his Kent, Connecticut, home. Nicole Bartelme, his wife, confirmed that he had died of a heart attack.

The restaurant that first popularized TriBeCa as a dining destination, Montrachet, was where Mr. Bouley’s sleek and uncomplicated food made its grand debut in 1985. The New York Times awarded it three stars, making it one of the first contemporary French restaurants to do so.

Through his restaurant Bouley, which had multiple locations between 1987 and 2017, he introduced New Yorkers to innovative concepts such as tasting menus in the Japanese style, sauces made with vegetables, and the importance of using ingredients that were sourced locally.
